Whole and skim milk samples were heated with 2450 MHz (CW) MW in a conventional microwave oven to determine if exposure could isomerize and racemize amino acids in milk proteins, specifically in infant formulae causing toxicity or affecting nutritional value. Microwave exposure was initially reported to significantly racemize L-proline to D-proline and converted trans-hydroxyproline to cis-hydroxyproline. Subsequent studies and an erratum in Lancet 1 month later did not support this initial conclusion. |
